Justin Jarrett of See Saw Wine makes elegant wines that reflect the purity of the Orange wine region. He’s also pushing boundaries – from organic farming to wild fermentation and unique blends.

For Justin and his wife Pip, things don’t get much better than sitting down to a meal and a bottle of wine all grown on their property. Their passion for sustainable farming and self-sufficiency is at the heart of everything they do – from growing grapes to handcrafting well-balanced wines using a less-is-more approach. “We’re not striving to be the ultimate luxury brand; we’re striving to be something that everyday people will enjoy,” says Justin. “I don’t generally conform, and I don’t like authority, so we’re definitely a bit rogue.”

Balance and harmony

Justin and Pip are farmers above all else. Justin grew up on a cherry farm, studied agricultural science with Pip at university, then the pair moved to Orange to start their own farming business – growing grapes for wine. That was over 25 years ago.

Today, Justin and Pip’s wine label, See Saw, is known for its elegant, award-winning wines that showcase the mountainous Orange wine region at its best. All their wines are certified organic, and sustainability is front and centre in the vineyards and right across the business.

“Our family philosophy is an old Cherokee saying, which is, ‘You don’t inherit the land from your parents, you inherit it from your children’,” says Justin. “If you look at indigenous cultures around the world, they have had a far greater respect for the Earth. So that is the philosophy of everything we do. We are always looking to the future, so that our children can do the same.” 

Justin and Pip own three organic-certified vineyards in Orange’s highlands, each at a different elevation.

“Every hundred metres is a temperature change, and every hundred metres means that there’s an opportunity to grow something different,” says Justin.

Their wines range from elegant Chardonnay and aromatic Pinot Noir to the experimental Incubator Range. This includes a unique, slightly cloudy Sauvignon Blanc Marsanne blend fermented with wild yeast.

“We grow wine in the vineyard, you get it in the bottle, and intervention between the two processes is very minimal,” says Justin.

“Wine is a moment in time, it’s a certain landscape that’s produced it. So I often say that you don’t need to travel the world to see other parts of it, you can just buy a bottle of wine.”
