Wine Description
The HIP SIP range of fortified wines are made to capture the attention of young consumers and bring new relevance to this unique wine style. Hip Sip is a blend of a number of vintages, and are often classified by age. Made from red grapes that are crushed and left to ferment on their skins to pick up the red colour. When the juice is partially fermented and retaining the correct level of residual sugar, spirit is added which stops the fermentation. The wine is then put into wooden barrels for ageing. As it ages and the solids precipitate to the bottom of the barrels the wine loses its youthful red colour and becomes a “tawny” colour. The aroma is a mix of ripe berry fruit, with rancio characters from extended barrel maturation. On the palate there is ripe fruit giving a generous mouth feel with hints of vanilla and chocolate. The wine has an attractive drying finish. Drink on it's own or use as a mixer in cocktails.

Winemaker's Bio
Nicholas Brown has lived and breathed wine his whole life, spending his childhood running around the cellars at his family winery. After school, he initially followed an interest in geological engineering before travelling and working in Europe for a few years. In 2003, Nick began a degree in oenology at the University of Adelaide. He worked in the Adelaide Hills, South Australia and and spent his holidays travelling and working in various French vineyards.
After completing his degree, he worked at Moss Wood in the Margaret River, Western Australia before moving back to All Saints Estate and St Leonards Vineyard to run the vineyard and continue the family winemaking tradition.
