Wine Description
With a pale straw colour this wine is light and packed with crisp, grapey flavour and hints of pear and honeysuckle. Its lush ripe fruit is complemented by tingly bubbles or ‘frizzante’. This slight fizz refreshes the palate and is enhanced by crisp acidity. The spritz and the sweetness are both naturally occurring in this wine. After picking, crushing and pressing, the juice ferments. This fermentation is carried out by yeast that consume the sugar and produce alcohol and carbon dioxide gas. The ferment is stopped just over half way through, and then kept very cold until it is bottled. By doing this, some of the sugar remains, the wine is low in alcohol and the carbon dioxide stays in the wine as a soft spritz.
Winemaker's Bio
Nicholas Brown has lived and breathed wine his whole life, spending his childhood running around the cellars at his family winery. After school, he initially followed an interest in geological engineering before travelling and working in Europe for a few years. In 2003, Nick began a degree in oenology at the University of Adelaide. He worked in the Adelaide Hills, South Australia and and spent his holidays travelling and working in various French vineyards.
After completing his degree, he worked at Moss Wood in the Margaret River, Western Australia before moving back to All Saints Estate and St Leonards Vineyard to run the vineyard and continue the family winemaking tradition.
