Wine Description
This wine is a lovely, sophisticated, modern style of Chardonnay with intense fresh lifted melon and stone-fruit characters. A savoury note from the barrel fermentation adds complexity and the merest hint of French oak on the finish. The juice was cold settled overnight before being racked and inoculated with yeast for fermentation. A portion was then run to oak once the fermentation was under way. When the tank ferment was complete the wine was then put into oak and matured for 7 months in 2 and 3 year old French oak barriques and puncheons prior to preparation for bottling.
Winemaker's Bio
Nicholas Brown has lived and breathed wine his whole life, spending his childhood running around the cellars at his family winery. After school, he initially followed an interest in geological engineering before travelling and working in Europe for a few years. In 2003, Nick began a degree in oenology at the University of Adelaide. He worked in the Adelaide Hills, South Australia and and spent his holidays travelling and working in various French vineyards.
After completing his degree, he worked at Moss Wood in the Margaret River, Western Australia before moving back to All Saints Estate and St Leonards Vineyard to run the vineyard and continue the family winemaking tradition.
