Wine Description
Displaying vibrant dark purple colour this wine shows classic varietal blackcurrant fruit character and undertones of minerality from its Rutherglen origins. It finishes long and dry with fine sandy structural tannins, and lovely spice notes from the French oak on the palate. Once picked, the fruit is put through the destemmer and then crushed, this must is then fermented for 7-10 days in our open vats. All the colour and the tannins that give the wine its backbone are extracted with twice daily hand plunging during fermentation on skins. After pressing and settling in tank, the wine is then aged for 16 months in 3-5 yr old French oak barriques and puncheons before blending and bottling.
Winemaker's Bio
Nicholas Brown has lived and breathed wine his whole life, spending his childhood running around the cellars at his family winery. After school, he initially followed an interest in geological engineering before travelling and working in Europe for a few years. In 2003, Nick began a degree in oenology at the University of Adelaide. He worked in the Adelaide Hills, South Australia and and spent his holidays travelling and working in various French vineyards.
After completing his degree, he worked at Moss Wood in the Margaret River, Western Australia before moving back to All Saints Estate and St Leonards Vineyard to run the vineyard and continue the family winemaking tradition.
