Wine Description
Deep colour and intense aromas of crushed red berries and dried herbs with a hint of pepper spice. Richly flavoured with plum, dark berry fruits and smooth mocha and spice from oak maturation, the fine structural tannins give it great length on the finish. This wine has all the hallmarks of a classic Rutherglen Shiraz. The fruit was destemmed and crushed into our 7 tonne open vat fermenters. During fermentation the cap was plunged 2-3 times per day to gently extract the colour and tannin from the skins and seeds. Once the ferment was complete the wine was pressed off using our 1883 hand-cranked wooden basket press. This old press is very gentle and allows us to create a powerful but very elegantly structured wine. The wine was matured in a combination of new (9%) and 2 - 4 year old French oak puncheons and barriques for 17 months.
Winemaker's Bio
Nicholas Brown has lived and breathed wine his whole life, spending his childhood running around the cellars at his family winery. After school, he initially followed an interest in geological engineering before travelling and working in Europe for a few years. In 2003, Nick began a degree in oenology at the University of Adelaide. He worked in the Adelaide Hills, South Australia and and spent his holidays travelling and working in various French vineyards.
After completing his degree, he worked at Moss Wood in the Margaret River, Western Australia before moving back to All Saints Estate and St Leonards Vineyard to run the vineyard and continue the family winemaking tradition.
