Wine Description
With incredible depth of colour, lifted aromas of dark berry fruits. Ripe fruit flavours and a structural tannin finish, this is an elegant but powerful Rutherglen Durif. A wine showing great finesse balanced with power. The fruit was destemmed and crushed into our old 7 tonne vat fermenters then inoculated with yeast for fermentation. Hand plunged three times a day during the early stages of fermentation, then reduced to two per day till the ferment was finished. Pressing was done using our 136 year old hand-cranked wooden basket press, this gentle press allows us to get all the wine but not over extract the tannins. Maturation was in 1 - 4 year old French oak barriques and puncheons for 22 months.
