Wine Description
Selected parcels of fruit picked from our best Cabernet block. Fermented in small, open-top fermenters to allow for greater winemaking flexibility and control over the maceration period. Hand-plunged twice a day. Pressed off into an array of oak. After 18 months of aging, the premium barrels were chosen and blended to create "the best of the best". Filtered and bottled on-site.
