Wine Description
The fruit was harvested at night to preserve its fresh, clean varietal characteristics of Sauvignon Blanc. After crushing and pressing, the juice was settled under cool conditions, racked off the lees, and temperature-controlled during fermentation to maintain vibrancy. A small portion of the juice was transferred to the barrel for fermentation to add some complexity to the wine. The wine was then fined, filtered, and sent to bottle. Pale straw in colour, with a nose of super aromatic orange blossom, apricots, citrus, and honeydew. The palate is full of mandarin, kiwifruit, and lemongrass with hints of honeysuckle. Zippy acid is tamed by creamy notes, and the wine has a long, dry finish.
Winemaker's Bio
Kate has been with Jilyara since the beginning in 2018. With more than two decades of winemaking under her belt she attributes her winemaking approach to letting the fruit speak for itself – just guiding the fruit through the process of winemaking - committed to letting fruit sing and carefully selecting oak formats to compliment varietals. Kate’s winemaking career began in 2002 in the McLaren Vale. Graduating university with a Bachelor of Viticulture and Oenology, she then worked in South Australia, Hunter Valley (NSW), Tamar Valley (TAS), Yarra Valley (VIC), Oregon (USA), Swan Valley (WA), and Portugal. Kate has been a finalist for both Young Gun Winemaker of the Year and Gourmet Traveller Young Winemaker of the Year.
