Wine Description
This intensely complex wine is rich in stone fruit, citrus and melon. The creamy texture is perfectly integrated with the sweet oak and natural acidity which leaves a lasting impression on the pallet. The fruit was chilled and whole bunch pressed. A portion of the Chardonnay juice was transferred straight to Oak for a full solid wild ferment. The remaining portion was transferred to tank for a week of chilling to work the light lees through the juice.
Then lightly racked to oak (40 % new French Oak 50 % one year old French oak and 10% two year old French Oak). This portion started ferment naturally then over seeded with a culture. The barrels were left un-sulphured and stirred regularly until we found balance in the wine.
Malo lactic fermentation was not encouraged but not prevented thus a fraction completed secondary fermentation adding to the complexity of the wine. The best blend was selected from the group and blended after 10 months maturation.
