Wine Description
Harvested at the commencement of vintage in the cool of night. Rapidly moved to the press where the free run is quickly cut and the juice chilled. Ferment is on high solids at 17-20 degrees for two weeks. The base wines all undergo full MLF. The fresh vintage wine is then transferred over the solera blend. Lees stirred bi-monthly.
