Wine Description
Handpicked in April 2025. 60% of the fruit was destemmed, placed in open vats to wild ferment. The remaining fruit underwent semi-carbonic maceration (wild fermentation), 100% whole bunch, with a total of 3.5 weeks on skins. The fruit was then pressed and transferred into old oak barrels to mature for 10 months. This wine is unfiltered and unfined. Designed to be a fresh but serious expression of this variety with vibrant fruit alongside intense savoury elements.
