Wine Description
Night harvested, 30% barrel ferment in french barriques, 3% new french barrique, native ferment. The barrel fermentation adds complexity to both the bouquet and palate, but leaves the fruit intact. Light lychee and guava flavours are given grip by citrussy acidity. Our fusion of old and new world technique blurs boundaries to create a more layered, complex expression of sauvignon blanc.
Winemaker's Bio
Winemaker Daniel Shaw has loved being a part of the wine industry for his whole life. He grew up in the Hunter Valley, during a boom time in the Australian Wine Industry where he was witness to the growth and expansion of a local family run winery. He's also had the privilege to work as both a red winemaker in California and Group Winemaker in New Zealand for two large and highly successful wine businesses.
During his university years he was able to travel the world gaining valuable work experience. He's worked in cellars in Burgundy, Montipulciano, Chianti as well as here in Australia, in Margaret River, McLaren Vale and The Yarra Valley.
After many years of working abroad Daniel was ready to return to Australia and specifically the Orange Region where he had spent many years planting my family’s vineyard with his dad. With years of experience in large corporate wineries he was so keen to return to a small intimate setting where he could be a part of all aspects of winemaking.
His time is now occupied with trying to gain a deeper understanding of the place where we grow our grapes. Daniel is moving to a farming system that employs organic principles and encourages a union with the natural environment. He believes this is how he can truly express the site and create the wine styles that express who they are and where they are from.
"I've loved being a part of the wine industry for my whole life. Having made wine across 4 continents. I'm now back on Koomooloo taking the winemaking to the next generation.
