Produced using a modified solera, operational since the late 20th Century and was established by WB Chambers (5th Generation) utilising a 1986 vintage Muscadelle as the base.  This consists of 3 levels. First is a series of small barrels (hogsheads and puncheons) with levels 2 and 3 being 2300 litre casks. It is from level 3 that the bottles are drawn. 
 
The wine is bottled on demand.
Palate of malt, salted caramel with mocha and cold tea notes, good length of flavour with persistence. A luscious wine with age characters evident.

 Winemaker's Bio
Stephen Chambers - 6th Generation Winemaker
As part of a six generational wine business, Stephen started to help his father, Bill Chambers,  from an early age and throughout his schooling, whether it was in the cellar door, winery, vineyard or the farm.
After studying Oenology at Adelaide University, he spent some time in the Barossa Valley, Bordeaux and 
 Great Southern WA,  gaining experience.
Returning to Rutherglen in 2000, Stephen set about to 
 maintain the high quality fortified wines being produced, as well as improving the consistency of the table wine offerings.
Stephen has created great rapport with International and National trade and has kept the traditional winemaking processes alive.
