Wine Description
Ruby Grapefruit. Pink Peppercorn. Strawberry Leaf. Textural. Delicate.
Sourced from our vineyard in Apple Tree Flat, Mudgee, at an elevation of 520 metres above sea level, these
grapes have great depth of flavour with freshness and vibrancy due to the cooler than normal growing season.
To attain bright fresh varietal characteristics the grapes were harvested separately later than normal due to the
cooler growing season combined with regular rainfall. They were then destemmed and must-chilled. This must was drained and soft pressed only after which the settled juice was racked, then warmed and inoculated. All varieties were separately fermented in stainless, old neutral oak, and foudre and blended prior to final
maturation. As a final blend the batches were racked off gross lees, while maintaining light lees contact for 12 weeks to allow the mid-palate to build texture and depth.
The wine was then left to settle before being clarified, filtered, and bottled in September 2022.

Owner and chief winemaker, Simon Gilbert has successfully built a reputation as one of Australia’s leading winemakers. Critical to his success has been his development of wine styles using varietals unique to cool climate regions, as well as a consistently strong performance in national and international wine shows, wine trade reviews and marketplace presentation. Simon has been responsible for crafting wines that have received more than 60 trophies and 1,500 medals since 1985.
Will Gilbert, Simon’s son, became the Assistant Winemaker in 2014 and Winemaker in 2016, and has become the driving force for innovation, experimentation, and further attention to crafting wines which represent each of the regions. The Gilbert brand represents the next generation of winemaking, as Will Gilbert takes on more of the winemaking and company direction.
