White Pepper. Forest Berry. Plum. Cherry. Spice. Structured. Long. Fine Soft Tannin.
Sourced from the foothills of Mt Canobolas, at an altitude of 880 – 900 metres, these vineyards have extremely fertile soil, rich in volcanic ash. It is deep well drained clay loam, and red and brown ferrosol soils derived from basalt, with silty textures being found at hill top sites. The combination of both the cooler climate and plentiful sunshine, is vital to the fruits ability to develop intense aromas and maintain flavour.
Handpicked and hand sorted, these grapes were harvested in small lots in the early morning taking advantage of the cool morning temperatures. Open fermentation took place in small batches and 2 x 900L roll barrel fermenters.
The ferment was then basket pressed and matured in new (30%) and older French oak. 14% of the wine was made up of the barrel ferment component. This component was transferred to new oak barrels and here it continued to ferment in a super reductive
environment increasing its complexity and interest.

Winemaker's Bio
Owner and chief winemaker, Simon Gilbert has successfully built a reputation as one of Australia’s leading winemakers. Critical to his success has been his development of wine styles using varietals unique to cool climate regions, as well as a consistently strong performance in national and international wine shows, wine trade reviews and marketplace presentation. Simon has been responsible for crafting wines that have received more than 60 trophies and 1,500 medals since 1985.
Will Gilbert, Simon’s son, became the Assistant Winemaker in 2014 and Winemaker in 2016, and has become the driving force for innovation, experimentation, and further attention to crafting wines which represent each of the regions. The Gilbert brand represents the next generation of winemaking, as Will Gilbert takes on more of the winemaking and company direction.
