Wine Description
Sourced from six blocks within the estate, a combination of approximately 50% vines planted in sand, and 50% in ironstone soils. Picked between the 21-29 March, destemmed and mechanically sorted. 50% whole berries. A portion of the ferment is done with 20% whole bunches, and a touch of Viognier. Cold soaked and put into open fermenters for wild yeast ferment. No pressings are used in this wine. Kept on lees in French oak (20% new, 80% older) for 10 months.
