A true varietal Cab Fran and a delight to experience the pureness of this, making it so much easier to understand what to look for both bouquet and taste. Again Allier oak was used. 50%, medium toast and spent 17 months prior to bottling on 8 Dec 2016. 8% Merlot was added. This still gives lovely plummy lift yet does not over-power the florals.
Winemaker's Bio
A legendary winemaker in Australia and truely Master of Merlot. For this of you who don't know of Jim Irvine, he has been a leading wine maker from the Barossa Valley building his reputation as a pioneer of creating world best merlot wines. He willingly describes himself as a contrarian in many aspects of his long journey and not least in the wine making sphere. When the rest of Australia was only thinking of Shiraz or Cabernet Sauvignon, Jim was taking Australian Merlot to world class heights. If you have been lucky enough to enjoy a bottle of his Irvine Grand Merlot then you are privileged. This wine won the world best merit - yes it beat Chateau Petrus on a number of occasions. Now at nearly 90 years of age, Jim has retired from the day to day of the wine business but as one of his exit offerings and to prove he remains a contrarian, Jim produced a sensational Marjico Cabernet Franc.
