Well considered harvest decisions, to ensure the fruit expression and acid levels are in balance to start the winemaking process. The fruit is harvested in the cool of the night to retain freshness and is promptly processed into a gentle press on receipt at
the winery. The resultant juice is partly clarified and transferred onto oak for fermentation.
