Vermentino 2024

Hand-picked from a single vineyard in Boyup Brook 150km west of Margaret River, the cool nights of this location bring bright acid and lifted aromatics to this Mediterranean grape. We chilled the fruit to 5C overnight then gently whole bunch pressed to yield fine, cloudy juice. Fermentation was completed by wild yeast in tank then aged on fine lees for seven months, bottled without fining or filtering. Citrussy, tangy & textural.
