Hand-picked, chilled overnight, then whole-bunch pressed straight to barrel, one new - water bent rather than fire for a more subtle integration. Funky wild ferment with full solids then on fine lees, stirring gently every four weeks for a total of seven months ageing. Bottled unfined & unfiltered. Elegant, fine & restrained
