Original plantings at Juniper – 50 year old, dry grown. Loam over free-draining ironstone gravel. Hand-picked with half destemmed (not crushed) to open fermenters, half kept whole bunch – both fractions food-trod & hand plunged. Basket pressed to a combination of French barriques, hogsheads and puncheons ~15% new. Aromatic, linear and expressive.
