Hand-picked from sandy loam over gravel. The fruit was chilled overnight then de-stemmed into an open fermenter, foot trod for a cold soak until wild ferment kicked off. Hand plunged over 10 days and basket pressed into old puncheons for eight months of ageing. Bottled without fining or filtering. This Franc is fragrant, bouncy & juicy.
