Made from a small block of sauvignon blanc next to the dam on the Napoleone Vineyard (Coldstream), we crush and press the juice to old hogsheads for a warm, high solids fermentation. The wine remains in oak for 3 months, stirred monthly. Racked out in mid-May, and bottled in late May 2021.
