Picking of fruit began in mid-March, once harvested the stems were removed and the fruit fermented in stainless steel fermenters. A relatively warm ferment to extract the plush fruit flavours was followed by 18 months maturation in seasoned American Oak of which 30% was new. Freshly sliced panforte – date, fig, with dark chocolate and plum that becomes more apparent with time in the glass. Immediately recognisable American oak, sweet Vanillin spices and a propulsion of dried roasted almond enhancing not intruding.
