A carefully crafted blend of the traditional Bordeaux varieties, Cabernet Sauvignon (51%), Merlot (24%) and Cabernet Franc (25%). Each of these varieties brings something special to the blend: Cabernet Sauvignon the lovely berry flavours and fine tannins, Merlot a rich mid-palate and the Cabernet Franc gives lifted floral notes. The wine is medium bodied with a deep ruby colour and aromas of cassis, violets and mixed spice. The palate is firm with fine structural tannins and good acid balance, making it ideal for cellaring. The varieties were picked and fermented separately in the old open concrete vats at the castle. They were hand plunged two or three times per day during fermentation, before being pressed off in our old basket press. Then aged for 24 months in a combination of new (28%) and 2-3yr old premium French oak prior to blending and bottling.

Nicholas Brown has lived and breathed wine his whole life, spending his childhood running around the cellars at his family winery. After school, he initially followed an interest in geological engineering before travelling and working in Europe for a few years. In 2003, Nick began a degree in oenology at the University of Adelaide. He worked in the Adelaide Hills, South Australia and and spent his holidays travelling and working in various French vineyards. After completing his degree, he worked at Moss Wood in the Margaret River, Western Australia before moving back to All Saints Estate and St Leonards Vineyard to run the vineyard and continue the family winemaking tradition.
