Wine Description
The fruit was picked in February for the Perth Hills component and in March for Donnybrook. Both batches of grapes were crushed with a large portion of whole berries before fermentation on skins for a period of 12 days. Both batches were basket pressed to oak with a small (15%) portion of new puncheon oak utilised. Barrel maturation took place for 9 months. The wine was then lightly fined and coarsely filtered to provide natural character and texture.
