Fiano 2025

Our 2025 Fiano is estate-grown on an ancient fault line, rooted in free-draining Christies Beach Formation soils that lend mineral tension and savoury nuance. Handpicked at 12.5 Bé and pressed straight off skins, it’s fermented in stainless steel with full malolactic, then split between tank (lees stirred) and seasoned French oak barriques (weekly bâtonnage) to build subtle mid-palate weight without overt oak. Lemon in colour, it shows citrus blossom, pear, apple, lemon curd and flint, finishing saline and fresh with a clean mineral line. Drink now or cellar 5–7 years.
