This expressive, textural Grenache Blanc hails from Blewitt Springs, grown in a vineyard called Marmont on ancient sandy soils at 250 metres above sea level. All the fruit underwent two days of cold soaking on skins at approximately 5°C. After the cold soak, one-third of the fruit was fermented on skins under complete oxygen exclusion. The remaining two-thirds were pressed and fermented on full solids for two weeks to enhance texture. After one month, the skin-contact portion was pressed and blended into the remaining wine. The result is vibrant and varietal, showing lime pith, pear, ginger, green apple, and a subtle toasty edge. Minimal intervention. Low sulphur.
